Zucchini & Potato Browned Breakfast Hash

Ingredients:
1/4c oil of your choice
1lb zucchini, loosely diced
1.5lb potatoes, loosely diced
1 medium onion, loosely diced
optional : whole sweet pepper, diced
salt & pepper to taste
4 eggs
kale or chard, chopped

Directions:
1) rinse and pat dry potatoes
2) warm 2tbsp of oil in skillet over medium-high  heat in cast iron or nonstick skillet.  Add zucchini, and cook until golden (3-4min).  Add onions and peppers, cook until soften, remove to bowl
3) toss potatoes with remaining oil, add to hot skillet and saute until golden/crisp. (10min). Return zucchini mixture to skillet and heat through
4) fry eggs in alternate pan, remove.  Lightly wilt greens in warmed pan.  Top potatoes with egg and greens & serve!
