Zucchini Kale Fritters

1c grated zucchini
1c kale (finely chopped)
2 eggs
1/4c flour
½ tsp garlic powder
½ tsp salt  
pepper to taste
oil or butter for the pan

1) Grate the zucchini and wring out excess water
2) Place into bowl, and add remaining ingredients, mix well
3) Heat oil in skillet over medium heat
4) Place 2-3tbsp of batter into pan, flatten slightly
5) Cook 2-3min on each side, until golden brown

Serve with sour cream and sliced green onions baby leeks
