Ingredients :
1 ½ C arugula (loosely packed)
1/3 to 1/2 C extra virgin olive oil
1 ½ C spinach (loosely packed)
¾ c loosely packed grated Parmesan cheese
2 stalks green garlic (stem included)
1 C toasted walnuts
salt and pepper to taste

1) Place dry ingredients into food processor (can use immersion blender!)
2) Pulse until chopped
3) Add oil slowly to chopped ingredients until desired consistency is reached

Store in fridge up to two weeks. GREAT in scrambled eggs with extra Parmesan grated in!
